Mom's Macaroni Salad

Since I had a couple requests for my Mom's macaroni salad recipe, I thought I better post it now while I'm thinking about it. Mom rarely used a recipe, she would just throw things together and they were terrific. I grew up on fried potatoes almost every night. Every Sunday we would have fried chicken or a roast with mashed potatoes and gravy, vegetables and macaroni salad. Now I'm getting away from the recipe.

Just use whatever vegetables you have on hand, but be sure to include the green olives and don't substitute mayo for the Miracle Whip. You can use red and yellow peppers too to make it more colorful and/or use the 3 colored macaroni. Back in the 70's I think elbow macaroni was the only type available. The amount of vegetables depends on the amount of macaroni you use. When you are putting it together, you'll know if you have enough.

Macaroni Salad

Elbow Macaroni
sweet pickles - 5 or 6 midgets or 1 or2 large
green olives - a big handful
green pepper - half or less of a medium sized pepper
onion - 1/2 medium sweet onion
cucumber - 1 small
carrots - 1
radish - 4 or 6
Miracle Whip (not mayo)

Cook macaroni until tender. Drain and rinse with cold water. Cut all the vegetables into very small pieces, slice olives. Toss macaroni with vegetables and add enough Miracle Whip to lightly coat the macaroni. Add salt and pepper to taste. Chill.

PS: Didn't you love my measurements. LOL I'm just like Mom, I just throw it together, not paying much attention to the amount. I've also added hot banana peppers in the summer.

My Mom always used Miracle whip for her potato and macaroni salads too.
I have always used mayo, but otherwise ours are quite similar.
