Nothing Interesting To Write

Since I got back from the YMCA this afternoon I've been popping on and off of this blog trying to come up with something worth reading. I've popped over to visit a few friends and came back here, still nothing is inspiring me. I went in the kitchen and threw together a casserole for dinner, now I'm back trying to think of something again.

This past year, my hubby's family put together a family cookbook. I love this type of cookbook because all the recipes are great. I ran across one that really got my attention and made it right away. This is the same one I have in the oven tonight. So, I'll just give you this recipe.


RUBEN CASSEROLE

1 lb. noodles, cooked and drained
2 cans corned beef
2 cans cream of chicken soup
1 large or 2 small cans sauerkraut, drained
1 large pkg. grated or sliced Swiss cheese
1 1/2 c. milk, mixed with chicken soup
1 c. cracker or bread crumbs
1/2 c. melted butter

Place noodles in 9 x 13 inch pan or dish. Pour chicken soup over noodles. Slice corned beef over soup. Spread kraut over beef. Cover with cheese. Spread cracker crumbs on top. Pour melted butter over crumbs. Bake uncovered at 350 degrees for 1 hour.

I cut this recipe in half for just the two of us and its enough for 2 meals or more.

I don't know if we would like that or not..corned beef i have not had much and saurekraut is not one of my favorites...Got any others?? Smile...Sandy

sounds yummy, I love corned beef, but have never made it. We usually do pork and saurekraut.

Like the Christmas music.
